Easy Vegan French Toast

With more and more people starting a vegan lifestyle or eating more plant-based, I thought I would share a beginner vegan recipe that is also very delicious. I normally eat whole foods (not the store) but it is okay to indulge every once in a while, especially when in doing so you are spreading the vegan message. Serves: 2 | Prep time: 5 minutes | Cook time: 10 minutes

INGREDIENTS: 

  • 2 slices of vegan friendly bread (french, multi-grain, etc. just check the label).
  • 2 tbsp. of ground flaxseed (for the flax egg).
  • 6 tbsp. of water (for the flax egg).
  • 1 tbsp. of cinnamon.
  • 1 tsp. of vanilla.
  • 1 tsp. of coconut sugar.
  • 1 tbsp. of agave or maple syrup.
  • 1 cup of almond milk or other plant-based milk.
  • 1 tbsp. of vegan butter or coconut oil.
  • 1 cup of your favorite fruit.

DIRECTIONS:

  • Mix together 2 tbsp. of flaxseed with 6 tbsp. of water to make a flax egg. Leave the mixture sitting for about 5 minutes.
  • In a large mixing bowl, whisk together the milk alternative, vanilla, syrup, coconut sugar, cinnamon, and lastly – the flax egg.
  • Dip the bread into the mixture.
  • In a skillet, heat up vegan butter. Then, place the bread in the skillet and cook for a few minutes on each side (until edges are golden brown).
  • Add desired toppings.

ADDITIONAL COMMENTS:

  • If you are avoiding non-fruit sugars, I suggest taking out the syrup and using a homemade bread.
  • If you don’t have coconut sugar, you can use cane sugar or omit it altogether.
  • Instead of using a flax egg, you can mash up a ripe banana and put that in the mixture. However, this can affect the texture.
  • If you want to make this an oil free recipe, you can bake the french toast and take away the vegan butter/cooking oil. Bake for 40 minutes at 350°F in a 9 x 13 baking dish.

  1. I gave this one a try today and I failed lol. The recipe is great and the flavor is amazing. I tried to substitute banana for the flax seed despite the warning about texture. I didn’t get the mixture quite right. My bread ended up being too soggy because my batter was too wet. I broiled the toast to get it to crisp up and it turned out ok. The bread wasn’t as soggy, but next time I’ll wait til I have more flax seed. Overall though a great recipe even after I messed up the actual cooking of the toast.
