I have said it before and I will say it again, “I LOVE CARBS”. The two best things about being vegan are 1) I don’t cause harm to animals and 2) I eat as much pasta as I care for. Pasta can be a versatile and simple dinner. I wanted to share my three favorite ways to have pasta. These will be great for you if you are short on time or just wanting comfort food.

Pasta 3 ways

The first is Hummus Pasta. This might sound weird, but I promise it is so creamy and delicious. Basically, you cook your preferred pasta according to the package instructions. I typically use whole wheat pasta because it has more fiber and less cross contamination with dairy. Most store bought pasta is vegan friendly, I would just double check before you buy. Back to the recipe: I drain the pasta and then add in half of a container of red pepper hummus. I add some garlic powder, salt, and nutritional yeast. The last thing I do is add in cherry tomatoes and spinach, but this is optional. I don’t really measure anything for this dish. I haven’t tried this with original hummus or other flavors, but I’m sure any kind will do.

The next pasta dish is really traditional. It is just your preferred noodle with marinara sauce. Most of the time I just buy pre-made sauce and add italian seasoning. If you have the time, you can blend together crushed tomatoes with herbs and spices. I add nutritional yeast and spinach to the finished product. I feel like I don’t need to go in detail because most people know how to make this one.

The last dish is the ultimate comfort food. It is my form of vegan mac and cheese. While your pasta is cooking, melt vegan cheese with a cup of almond milk and vegan butter. When the pasta is done cooking, drain and add in the mixture. I also added vegan meat and nutritional yeast. This is very rich, so I only have it every so often.

These are the my favorite plant-based pasta dishes! They are really easy and don’t really require a full recipe. Another great way to have pasta is to just add olive oil and sun dried tomatoes to the plain noodles. I hope this post has given you some meal inspiration.   1. They look so yummy!! 😍 One of my favourite pasta recipe is pasta avocado! Basically you smash avocado, add some olive oil, salt and pepper and blend it with your pasta! You can also add some basil, it’s sooo easy and so creamy 😍
