Vegan Pasta Bake + Tofu Ricotta

I used to roll my eyes when a food blogger talked about tofu ricotta and how it was so similar to traditional ricotta. I didn’t believe them to be honest. Cheesy lasagna and pasta bakes were something that I missed from before I was vegan. So I started experimenting with tofu ricotta. The first time I made it, it was garbage. It tasted so bad, but I finally have a recipe that tastes good and performs similarly to traditional ricotta.  Pin This For Later ⇓♥ This recipe is also gluten free. I used a pasta that was made out of green lentils and that’s why the picture has a green…

    A Vegan Thanksgiving (2018)

I went overboard this year… I cooked and ate way too much over Thanksgiving. The holidays are for binge eating though, at least in the US. Last year, I posted recipes from Thanksgiving and I thought I would continue the tradition this year. Here is a rundown on what I ate… Pumpkin and Maple Scones. Apple and Pear Crisp. Vegan Spinach Artichoke Dip. Vegan Stuffing. Salad. Sweet Potato and Bean Chili. Tempeh (sautéed). Some of the recipes I have already posted, so I will link to that specific post. Pumpkin and Maple Scones The recipe can be found here: Vegan Recipes for Fall (Sweet and Savory). Pear and Apple Crisp This…

    Inauthentic Vegan Falafel

I researched a lot of falafel recipes. Many of them said things like “you must use chickpea flour” or “canned chickpeas WILL NOT work”. That’s a bit dramatic. I enjoy authentic falafel; but when I make it at home, I am not going to go out of my way to make a glorified veggie patty. So if you are wondering why “inauthentic” is in the title, it’s because this is a more Americanized and forgiving recipe. Nonetheless, it is delicious and healthy. PIN THIS ⇓♥ On to what you came here for, the recipe… Prep Time: 15 minutes Cook Time: 30 minutes Medium Difficulty Print INGREDIENTS: 2 cans of garbanzo…

This brings back memories! As a kid, I had some sort of hamburger helper dish about once a week. I always looked forward to it. Quick Vegan Meals | Summer Edition

Summer can be a very busy time. Most of us can’t be bothered to cook elaborate meals, especially when we would rather be outside or hanging out with friends. These meals are super simple and also fresh and light (inspired by summer). I hope you enjoy these healthy vegan meals. Pin This ♥⇓ 1. Greek Orzo Salad This is something I ate a lot prior to being vegan. My family used to make this with chicken and feta cheese, but now I just omit those ingredients. Pasta 3 Ways // Vegan

I have said it before and I will say it again, “I LOVE CARBS”. The two best things about being vegan are 1) I don’t cause harm to animals and 2) I eat as much pasta as I care for. Pasta can be a versatile and simple dinner. I wanted to share my three favorite ways to have pasta. These will be great for you if you are short on time or just wanting comfort food. Pin This ↓♥ The first is Hummus Pasta. This might sound weird, but I promise it is so creamy and delicious. Basically, you cook your preferred pasta according to the package instructions. I typically use…

    Thai Peanut Noodles // Vegan

This is something that sounds complicated, but really this recipe is incredibly easy. I make peanut noodles whenever I need a quick meal that is very filling and nutritious. Vegan “Tuna” Salad

This summer has made me so nostalgic. I have especially been thinking about foods I used to eat in the summertime. For me, summer reminds me of family barbecues. At these barbecues, people bring all sorts of dishes covered in mayonnaise. This could be tuna salad, potato salad, chicken salad, crab salad, etc. The way I describe it sounds so gross, but since being vegan I have missed some of these dishes. I have learned that garbanzo beans or chickpeas can often serve as a mock meat. That’s why it works so great for recipes like these. Printer Friendly Version HERE INGREDIENTS… 1 can of garbanzo beans drained. 1-3 tablespoons…
