    A Vegan Valentine’s Day & Chocolate Cupcakes

I think I need to give myself kudos on this one because this is a twofer and I am actually getting it up before Valentine’s Day! As the title suggests, I have a cupcake recipe to share. I also wanted to share some vegan-related Valentine’s Day ideas. Although I am single, I don’t despise Valentine’s Day. I think that it can be a time to show gratitude to your loved ones; whether they are a significant other, friend, or family member. Pin This For Later 🙂 I don’t know if I have talked about this here, but I bought a cookbook secondhand and I thought it would be cool to…

    Cranberry Cinnamon Buns (Vegan)

These are some nice buns! My baking game has elevated and I am now using yeast. Let me warn you, yeast is a fickle beast. Sometimes everything goes great and other times- it’s a complete disaster! The bright side of yeast is that traditional baking ingredients like eggs, are not required to raise the dough. Which is great news for all of us eating plant-based. Pin This For Later 🙂 Homemade cinnamon rolls have always intimidated me. In the past, I would just go for the kind that came in an aluminum cylinder. You probably know the kind. I’m always looking for new things to veganize. There are store bought…

    The Nifty Fifty Review

The infamous 50 mm lens. Most photography enthusiasts rave about this lens, with good reason. For non-professionals or people just starting out in photography it can be intimidating to stray from the kit lens. Before purchasing this lens, I read tons of reviews. Everything I know about photography is self-taught. I am not incredibly knowledgeable about the technical side of a dslr. Most reviews were highly technical and on one hand this was helpful. But on the other hand, it made me confused as to whether it was worth the investment. I’ll try to keep this review reader friendly. Typically this lens retails for around $125. Right from the start,…

Dark Chocolate & Cranberry Scones (Vegan)

These exceeded my expectations! This recipe is not something I had planned. I was making some basic scones on a Saturday morning, as one does, and I just so happened to have dried cranberries and vegan chocolate in my pantry. A star was born. Some of the best scones I have made, truly.  Yum, Yum, and Yummy are three words to describe these scones.  Pin This For Later! I used a blend of oat flour and wheat flour. You can use all-purpose if that is easier. For the fat, I used coconut oil. This made nice layers, but chilled margarine will have the same effect. The rest of the ingredients…

    Inauthentic Vegan Falafel

I researched a lot of falafel recipes. Many of them said things like “you must use chickpea flour” or “canned chickpeas WILL NOT work”. That’s a bit dramatic. I enjoy authentic falafel; but when I make it at home, I am not going to go out of my way to make a glorified veggie patty. So if you are wondering why “inauthentic” is in the title, it’s because this is a more Americanized and forgiving recipe. Nonetheless, it is delicious and healthy. PIN THIS ⇓♥ On to what you came here for, the recipe… Prep Time: 15 minutes Cook Time: 30 minutes Medium Difficulty Print INGREDIENTS: 2 cans of garbanzo…

    Vegan Hamburger Helper

This brings back memories! As a kid, I had some sort of hamburger helper dish about once a week. I always looked forward to it. I haven’t seen a vegan version in grocery stores, so I decided to just make one up. This recipe is family friendly, easy, and it’s great comfort food. I hope you enjoy it! Pin This ↓ Prep Time: 10 minutes Cook Time: 30 minutes Difficulty: Easy Cuisine: American, Vegan Printer Friendly Version Here Ingredients: ½ box of whole wheat macaroni or penne pasta. 1 block of Daiya Cheddar Cheese or other preferred vegan cheese. Meatless crumbles or other vegan meat (I used half a package).…

    Food Photography in September

It’s that time again! Welcome to the September edition of my monthly vegan food porn series. I’m starting to get the hang of this food photography thing. Definitely far from a professional level, but you have to start somewhere. I’ve been more consistent with my props and backgrounds and I feel like this has improved my results. I also do minimal edits.  I adjust the color in certain areas and then I slightly adjust the saturation and contrast. Then, I apply a filter that isn’t too dramatic. Some of the more simplistic photos, I took on my phone and it’s just me holding the bowl/plate. I like to have a…

    Sweet Treats for Vegans

Following a vegan lifestyle shouldn’t feel limiting! You don’t need to say goodbye to your favorite treats when you adopt a plant-based diet. Only a few easy substitutions are needed! I have three sweet treats that I want to share. They are fully vegan and beginner friendly. Pin This ⇓♥ 1. Lemon Blueberry Bread I cheated on this one because it’s barely homemade. This is more of a food hack. Most baking mixes are accidentally vegan. Instead of using eggs use a flax egg (1 tbsp of flax seeds with 2-3 tbsps of water = 1 egg) or 1/2 of a mashed banana. If the box calls for milk, just use…

Quick Vegan Meals | Summer Edition

Summer can be a very busy time. Most of us can’t be bothered to cook elaborate meals, especially when we would rather be outside or hanging out with friends. These meals are super simple and also fresh and light (inspired by summer). I hope you enjoy these healthy vegan meals. Pin This ♥⇓ 1. Greek Orzo Salad This is something I ate a lot prior to being vegan. My family used to make this with chicken and feta cheese, but now I just omit those ingredients. This is a good dish to meal prep because it serves about 2-4 and it stays well in the refrigerator. Ingredients… 1/2 Package of orzo…
