    Inauthentic Vegan Falafel

I researched a lot of falafel recipes. Many of them said things like “you must use chickpea flour” or “canned chickpeas WILL NOT work”. That’s a bit dramatic. I enjoy authentic falafel; but when I make it at home, I am not going to go out of my way to make a glorified veggie patty. So if you are wondering why “inauthentic” is in the title, it’s because this is a more Americanized and forgiving recipe. Nonetheless, it is delicious and healthy. “Do you only eat salads?”. I laugh every time someone asks this. Eating vegan doesn’t have to be boring. I have proved this time and time again. Sick During the Holidays

During the holiday season, it seems like there are always a few unlucky individuals that get sick. This year, I was the unlucky person. A few days ago, I had a gross stomach virus. Fortunately, I got over it fairly quickly. I want to share some things that helped me and hopefully they will help you get healthy before Christmas parties/dinners. 1. Drink Fluids This is probably the most important (and obvious) step if you are sick. It is really common to become dehydrated from a stomach virus or other sickness. Drinking tons of water will restore balance to your body and will reduce fatigue. I became dehydrated from my…

    Fall Inspired Meals (Vegan)

Just like any other blogger, I am crazy about fall. Lately, I have been more creative in the kitchen and I want to share some autumn inspired meals. I forgot to write down the full recipes, so I’m apologizing in advance for that. Sweet Potato and Black Bean Enchiladas Don’t know what to call this…Sweet potato, mashed red lentils, spinach, and couscous.  Pasta with roasted tomato and spinach. Steamed Broccoli and seasoned sweet potato wedges.  Most of these dishes have sweet potatoes. When I think of fall, I think about sweet potatoes and pumpkins. I think of vibrant oranges and reds so those colors inspired my meals. I think next…

    Running Your Best

To some, running is hell. It is the workout that everyone dreads. I felt that way several years ago. But now running has become a regular part of my routine. My running journey has taught me several things. One thing I have learned is that it’s hard to run your best each time. Some days it’s hard to pick up your legs and other days running a half marathon seems like a piece of cake. I want to share advice that helps you run great each time (I’ve also included a helpful graphic). One of the most important things is fueling your body. For me, following a vegan lifestyle has been…

    Finding New Inspiration

Exhausted, fed-up, and barely functioning. Recently, I have experienced a low-point. I am not saying I’m depressed because I am far from it. People go through ups and downs and it’s perfectly normal, but lately it’s been hard for me to get excited about basically anything. Constantly switching between class and work has definitely taken a toll on me. Anything outside of school and work seems like a chore even if it is a social event. While I am not completely out of this funk–finding new hobbies, and analyzing my attitude has improved my drive a great deal. Changing your attitude is easier said than done and it is something…
