    You Just Went Vegan…What’s Next?

Welcome to my second coffee chats post, featuring my medium roast coffee with soy milk. I’ve been blogging for quite some time now and I just realized that I have never talked about my vegan journey or given advice to new vegans. I have talked about budgets, benefits and I have many recipes; but I think it’s time to give some unsolicited advice based on my experiences. Spark notes version of my journey… At about 16 years old, I made the decision to be vegetarian. But I wasn’t a strict vegetarian, so I had been vegetarian on and off until I was 20 years old. Around two years ago in January,…

    Inauthentic Vegan Falafel

I researched a lot of falafel recipes. Many of them said things like “you must use chickpea flour” or “canned chickpeas WILL NOT work”. That’s a bit dramatic. I enjoy authentic falafel; but when I make it at home, I am not going to go out of my way to make a glorified veggie patty. So if you are wondering why “inauthentic” is in the title, it’s because this is a more Americanized and forgiving recipe. Nonetheless, it is delicious and healthy. Vegan Hamburger Helper

This brings back memories! As a kid, I had some sort of hamburger helper dish about once a week. I always looked forward to it. I haven’t seen a vegan version in grocery stores, so I decided to just make one up. This recipe is family friendly, easy, and it’s great comfort food. I hope you enjoy it! Pin This ↓ Prep Time: 10 minutes Cook Time: 30 minutes Difficulty: Easy Cuisine: American, Vegan Printer Friendly Version Here Ingredients: ½ box of whole wheat macaroni or penne pasta. 1 block of Daiya Cheddar Cheese or other preferred vegan cheese. Meatless crumbles or other vegan meat (I used half a package).…

    Food Photography in September

It’s that time again! Welcome to the September edition of my monthly vegan food porn series. I’m starting to get the hang of this food photography thing. Definitely far from a professional level, but you have to start somewhere. I’ve been more consistent with my props and backgrounds and I feel like this has improved my results. I also do minimal edits.  I adjust the color in certain areas and then I slightly adjust the saturation and contrast. Then, I apply a filter that isn’t too dramatic. Some of the more simplistic photos, I took on my phone and it’s just me holding the bowl/plate. I like to have a…

My Favorite Cruelty-Free and Organic Products

This isn’t something I typically would post because I loathe shopping. But I haven’t posted about cruelty-free products in a while and I get questions so…here I am, writing about the products I use. I consider myself an ethical vegan, which means that I buy cruelty-free lifestyle and beauty products. If I can afford an organic option then I will also purchase that. It can get expensive, but buying online definitely helps. I also avoid buying makeup, so I save money there. All of these products I am going to share are affordable and add value to my life. High Protein Breakfast Recipes // Vegan

“But where do you get your protein?”. Immediately roll my eyes. Every vegan hates this question because nearly every whole plant food has protein. “But Kaley…What about essential amino acids?”. If you eat a variety of foods, then you have nothing to worry about. The only time you wouldn’t get an adequate amount of protein is if you are starving yourself (eating well under 1000 calories). Every vegan on the planet probably hears comments or questions like these. Most people don’t realize that plant-based foods/meals can still be high-protein. I try to eat higher protein in the morning because my days are busy. I do not necessarily recommend a high…

Veganism is a Privilege & Other Thoughts

It’s time to ruffle some feathers! I am going to talk about the “p” word, so if you are triggered by topics about privilege, then this is your warning. Before I dive into what I want to talk about, I just need to give a little disclaimer. I am vegan and I love this lifestyle and I am not bashing or gossiping about anyone specifically. Moving on… When I was a new vegan, I would get really annoyed when people said that it was too hard and too expensive and all those other excuses. I used to think that any person regardless of economic status could adopt a vegan lifestyle.…

    Sweet Treats for Vegans

Following a vegan lifestyle shouldn’t feel limiting! You don’t need to say goodbye to your favorite treats when you adopt a plant-based diet. Only a few easy substitutions are needed! I have three sweet treats that I want to share. They are fully vegan and beginner friendly. Pin This ⇓♥ 1. Lemon Blueberry Bread I cheated on this one because it’s barely homemade. This is more of a food hack. Most baking mixes are accidentally vegan. Instead of using eggs use a flax egg (1 tbsp of flax seeds with 2-3 tbsps of water = 1 egg) or 1/2 of a mashed banana. If the box calls for milk, just use…

Quick Vegan Meals | Summer Edition

Summer can be a very busy time. Most of us can’t be bothered to cook elaborate meals, especially when we would rather be outside or hanging out with friends. These meals are super simple and also fresh and light (inspired by summer). I hope you enjoy these healthy vegan meals. Pin This ♥⇓ 1. Greek Orzo Salad This is something I ate a lot prior to being vegan. My family used to make this with chicken and feta cheese, but now I just omit those ingredients. This is a good dish to meal prep because it serves about 2-4 and it stays well in the refrigerator. Ingredients… 1/2 Package of orzo…
